I know plenty of times that our leftovers go to waste because we don’t want to get stuck eating the same thing we did the night before. So where does it wind up going? Yup, that’s right. In the trash, along with my money 🙁
One thing that I love about MealFit is that many of the foods listed on their menus are foods I already eat and love. We were able to take a sneak peak at one of the MealFit menus and we couldn’t help but give one of their meals a try. This breakfast mash uses very simple ingredients and most of them could already be found in our home. All of the foods are things my family and I already eat so we really didn’t feel like we were giving up anything. Plus it was pretty tasty and was better for us than going out for breakfast. Check out the recipe below.
MealFit Breakfast Mash
Ingredients
2 Eggs
3 Slices of bacon (I used turkey bacon)
Handful of baby spinach
1 tsp of butter
2 tbsp. of cheddar cheese
1/2 Avocado
Salt, to taste
Directions
- Place your 3 slices of bacon on a paper towel and cover with a second piece of paper towel. Microwave 3 minutes.
- Heat butter in a skillet and saute spinach. While spinach is wilting, crack eggs and beat in a bowl.
- Once your spinach is wilted, add the eggs and scramble.
- When done scrambling, add everything to a plate and top with cheese, bacon, and avocado.
Last but not least, enjoy!! See how easy that was? It didn’t take long to make at all and it ended up tasting delicious! I ended up not being able to use the Avocado because unfortunately it wasn’t ready. However, the next time I make this I will make sure to get one that is more ripe and ready to use.

The original package is 95% paleo and gluten free most of the time but can easily have gluten eliminated.
