Breakfast Fajita w/ #JDCrumbles ~ Yum!

Our family loves quick and easy meals and trying something different when it comes to mealtime. That’s why Jimmy Dean sausage crumbles are a great item to use when you need a quick meal. We were able to test out Jimmy Dean sausage crumbles recently and challenged to share a recipe using it. I went with breakfast fajitas since this is perfect especially if you prep your veggies the night before.

Here is what you need:

  • 1 package of Jimmy Dean sausage crumbles
  • 1 onion
  • peppers (use as many colors as you like)
  • 1-2 Eggs
  • Olive oil or butter
  • home style potatoes (optional)
  • shredded cheese (optional)

Directions: 

(Optional ~ Prep your veggies the night or day before to cut prep time in half. Cut up your onions and peppers in thin slices and store in the fridge until it’s time to cook your breakfast fajitas). 

If you are using home style potatoes, cook these first according to the instructions since they will take the longest to cook (about 15 minutes)

While the potatoes are cooking, lightly coat the bottom of a skillet with olive oil or butter and saute veggies until they are just about tender.

Add Jimmy Dean sausage crumbles and cook an additional 6-8 minutes. Place to the side.

Beat 1-2 eggs and cook into a flat tortilla shape. Almost like making an omelet without folding it over.

Place your egg tortilla on a plate.

Top with potatoes, Jimmy Dean crumbles, veggies, and add cheese.

That’s it! This is a quick, easy, and delicious meal that can be enjoyed any time of day. These were my first time making something like this but it turned out to be a huge hit with the family, even the girls!     We always have fresh peppers of all colors in our house at all times even hot ones! So when we want a colorful dish we cook with these.
