Thanks for the recipe link. It totally reminded me I have an eggplant in the fridge I need to use and the recipe for stuffed eggplant looks like a real winner so I may have to give it a try. I usually just roast eggplant and other veggies in the oven for a side dish but this looks like it would make a great main course. 🙂
